Multiple versus single depots

I have multiple projects thare are worked on by different groups of people and I am
trying to figure out how to organize the depot.  The most straigtforward way is to
have

//depot/project1/main/...
//depot/project1/release x/...

//depot/project2/main/...

Perforce also allows the creation of multiple depots on the server.  So, instead of
everything being under "depot", I could set it up like:

//project1/main/...
//project1/release x/...

//project2/main/...

What are the advantages or disadvantages of doing it like this?  Would it be easier
to move a seperate depot to its own server if I wanted to do that sometime in the
future?  Can I branch between depots if there are files I want to share between
projects?
